1.5 lbs of sweet potatoes

1.5 lbs purple sweet potatoes

75g packed brown sugar

150g softened butter
- ½ tsp vanilla extractÂ

¾ cup chopped pecans (divided)

¼ tsp cinnamon
- Salt and black pepper to tasteÂ
- 2 cups miniature marshmallows
Directions
Preheat the Turbo E Outdoor Electric Grill to 350°F.
Grill the sweet potatoes for 1 to 1.5 hours, or until tender.
Scoop out the sweet potato flesh and mash it with butter, brown sugar, cinnamon, and vanilla until smooth.
Fold in crushed pecans and prepare the purple sweet potato mash separately.
Layer the yellow and purple sweet potato mash alternately in a greased pan for a vibrant presentation.
Top with marshmallows and additional pecans, then place in the grill at 350°F for 30 minutes.
