Ingredients

½ medium pumpkin, roasted and pureed (yields about 1 cup of puree)
Pumpkin Bread
- 2 â…“ cups all-purpose flourÂ
- 2 tps baking powderÂ
- ½ tps baking sodaÂ
- ½ tps fine sea saltÂ
- 1 tps cinnamonÂ
- 1 cup pumpkin pureeÂ
- 1 cup granulated sugarÂ
- â…“ cup oilÂ
- 2 eggs Â
- ¼ cup milkÂ
- 2 tps vanilla extract
Cream Cheese Frosting
- 4 oz. (113 g) cream cheeseÂ
- 4 tbsp (57 g) unsalted butter
- 1 tsp (5 ml) vanilla extractÂ
- 1 cup (125 g) powdered sugarÂ
- 1-3 tsp (5-15 ml) milk, as needed
Directions
Mix the ingredients for the Pumpkin Bread thoroughly.
Grill the pumpkin at 350°F for an hour.
Scoop out the pumpkin flesh and mash it into a puree
Add sugar, oil and stir well
Add two eggs, milk, and vanilla extract then mix thoroughly
- Add the prepared flour mixture.
- Mix thoroughly.
Pour the batter into the mold and smooth the surface evenly.
- Set the oven to 350°F and bake for 50 minutes.
Mix the cream cheese ingredients
Add butter, vanilla extract and powdered sugar and mix them thoroughly
Let the bread cool down at least one hour
- Spread cream cheese frosting on top.
- Slice and enjoy!
