- Bacon
Rub for Chicken Breasts
- 2 tbsp Brown Sugar
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dried Oregano
- 1 tsp Chili Powder
- 1 ½ tsp Kosher Salt
- ½ tsp Black Pepper
Cream Cheese Mixture
- 8 oz Softened Cream Cheese
- 2 tbsp Rub Mixture (from above)
- 1 cup Shredded Medium Cheddar Cheese
- 2 cups Baby Spinach
- Yellow and Red Bell Peppers, sliced
Directions
- Combine brown sugar, garlic powder, onion powder, dried oregano, chili powder, kosher salt, and black pepper in a small bowl. Mix well.
- In a separate bowl, mix softened cream cheese, 2 tbsp of the prepared rub, shredded cheddar cheese, and baby spinach. Stir until well combined.
- Slice the chicken breasts in half lengthwise, creating a pocket for the filling. Rub the seasoning thoroughly over all sides of the chicken breasts, including the inside.
- Fill each chicken breast pocket with the cream cheese mixture. Add slices of yellow and red bell peppers on top of the filling. Close the chicken breasts securely.
- Wrap each stuffed chicken breast with bacon strips, ensuring the entire chicken breast is covered. Use toothpicks to secure the bacon in place.
